Sterling Caviar owns and operates four white sturgeon farms in Sacramento, California. The water for our farms comes from the California Foothills, supplying pristine water used to tend to our family of stock. Our broodstock dates back over 30-years.
In 1983 we became the first commercial sturgeon farming operation in California. The began the 6.5 to10 year process of spawning broodstock.
During the period of 1988 to 1994, the process for raising our world-famous white sturgeon at our aqua farms, utilizing sustainable farming practices, was refined with tank reconfigurations and the fish begin producing caviar. Sterling became the first in the world to have produced commercial quantities of caviar from tank-raised sturgeon.
Today, Sterling Caviar is the leader in sustainable white sturgeon farming and sturgeon caviar production.
Sterling Farming Standards
Sterling farms can stand behind all of our products with full traceability, from the farm to your table. Sterling farming meets all the requirements for legal trade in international caviar and sturgeon products, having full CITES (Convention of International Trade in Endangered Species) permits.
Produced and processed in our Northern California farm under exacting and controlled conditions in accordance to HACCP (Hazard Analysis Critical Control Point) certified by the Food and Drug Administration, National Oceanic and Atmospheric Administration, Seafood Inspection Program and State of California Depart of Health Services.
