Sterling Caviar LLC has been in the sturgeon business for over 20 years. Sterling
Caviar LLC is made up of three separate sturgeon farm sites around Sacramento County, California. Each site is unique in the technology used to grow the fish. We range from using the water once in a "flow-through" system to using the water many times utilizing sophisticated filtration systems in recirculating systems.
Our sturgeon are grown in clean, fresh water. Housing of our sturgeon is in above ground tanks as opposed to earthen ponds (catfish) or canal like raceways (trout). Some of the tanks are as large as 40 feet in diameter and 9 feet deep.
All sites are high technology when it comes to monitoring the water and the fish. Such things as water flow, oxygen levels, and water temperature are all electronically monitored and set up to alarms which alert staff when levels move outside set parameters.
Working with the fish are up to 10 fisheries biologists (plus maintenance and processing staff) to make sure the sturgeon are all comfortable and pampered in order to bring you the finest caviar possible.
Our white sturgeon eat a very high quality pellet feed made primarily of fish meal. The fish meal supplies the protein needed by the fish for growth. Fish oil is in the feed for their energy requirement along with vitamins and minerals to complete their nutritional requirements.
The Sierra site is our largest and is where our caviar processing takes place. This location also houses our administrative offices.
